but I realized I need cream of tartar, which I don't have. No wonder my egg whites were foaming, but not forming stiff peaks... sweatdrop

it is hard to find these days, because it often contains ammonia
an imperfect substitute might be lemon juice (perfect for a lemon meringue pie!) or (yet more imperfect) vinegar
