I find that I listen to almost every genre at one point or another. I find myself finding a band I enjoy, listening to them for a week(and I mean EVERYTHING by them) then finding a new band, sometimes in an entirely different genre and listening to them. Right now I've been listening to a combination of Meatloaf, Streetlight Manifesto, Two Hours Traffic (A local band that just got big) and the Strokes.

I find that happens a lot too. One week I was in love with Slipknot and the next I was listening to a ton of the Kings Of Crunk. Completely different music.

DEFINATELY. Especially right after I discover a new album I really like. I'll just listen to it over and over and over... until eventually I move on to something else. And then of course I go through my artist fazes. One week its only Regina Spektor, the next the Shins, the next the Beatles hahaha. It's completely random just depends on my mood.

True music enthusiasts do, yes. It's not uncommon for 'hardcore' music fans to listen to a large repertoire of bands and genres, it just means they have good taste in music.
