my grandpa would always get us a grouse or a pheasant for Thanksgiving.
they were delicious; make you forget all about turkey.

grouse does not look or taste like any other fowl.
the meat is almond colored, dense and close grained, with little black flecks like pepper.
it tastes spicy and subtly sweet.

i walked out with him on some of his hunts, not carrying my shotgun, just admiring his well trained dogs.
and him, of course.
he was so wise, understood nature so well, he could take an abused or "untrainable" dog and make it a champion, with patience and love.
when a grouse is flushed from cover, it makes a huge racket, like an explosion, and it seems to fly every direction at once.
the first time i witnessed this i jumped out of my skin!
