Uh, it's hard to answer this... I really like most of the anime songs, but... I'll try to make a not-so-long list:

Hellsing - Opening (don't know its name confused ) and Shine (ending)
Gravitation - All of its songs heart
Tsubasa Reservoir Chronicles - Song of Storm and Fire
Cowboy Bebop - All of its songs
Naruto - 1st and 2nd opening
FMA - All of the openings
X - eXdream (opening)
DNA2 - Blurry eyes (opening)

Hellsing has the best soundtrack and I have both CDs. Saiyuki is really good to along with Gohst in the Shell.

there are a lot of good ones from inuyasha, bleach, FMA, naruto, eureka 7...

other animes have great theme songs too, but the series are usually shorter (DN Angels ending songs are very sweet. and i like songs from witch hunter robin, jigoku shojo, D Gray man...)

i like most of the opening/ending themes of gundam seed/destiny and some of naruto songs. inuyasha songs also are cool

Some of my favorite anime songs right now are very diverse... they include almost any version of Nagisa's signature melody from Clannad - her theme, "Dango Daikazoku," and both versions (riya and Lia) of "Chiisana Tenohira," any version of Misuzu's theme, "Natsukage," from AIR (both the game and the anime), and the current opening theme of Kidou Senshi Gundam 00, "Ash Like Snow" by The Brilliant Green. That song is one of the best Gundam openings I've heard in a while, and it's very good at capturing a sense of desperate heroism, a mood that fits where the show is headed right now as things are seriously tensing up.
